It was International Carrot Day on 4th April while you were all on school holidays. You can read all about carrots here in a post I wrote before. I thought we shouldn't ignore Carrot Day completely this year so we have this easy recipe for you to make your own carrot soup.

Carrot soup is super easy to make, tastes delicious and is healthy too.


  • 1 tbsp olive oil
  • 600g carrots, peeled or scrubbed and chopped into chunks
  • 2 onions peeled and finely chopped
  • 2 stalks of celery chopped
  • 1 1/2 lt chicken or vegetable stock
  • salt and pepper to taste

Heat the oil in a large pan and saute the carrots, onions and celery for 5 minutes

Add the stock, bring it to the boil and then lower the heat a little and let it simmer for 25 minutes till all the veggies in there are tender.

Cool slightly and blend with either a hand held stick blender or by carefully pouring into a jug style blender

Season with salt and pepper to taste

You can add corriander, ginger, chilli or orange juice to your simple carrot soup to make it taste completely different.
