Name 2 of your “food heroes” and tell us why they inspire you?

My 1st food hero has to be Willie Pike, the god father of Scottish Chefs Conference, a great ambassador to the food industry, a chef who has time for anyone interested in learning and developing themselves.

My 2nd food hero is Ian Spinks he keeps alive the tradition of the Arbroath smokie a true local food hero(as the papers say) a man with a great passion

What do you like to cook and why?

I love to cook local game and fresh seafood, two wonderful ingredients from the Scottish larder.

When did you decide to become a chef?

Visiting my brother at weekends when he was a chef gave me the bug, I just knew it was what I wanted to do.

What do you remember about School dinners?

Semolina pudding (horrible)

What was your favourite school dinner?

Fish Friday and caramel slice and lumpy custard

What was your favourite school dinner?

My perfect meal would be escalope of veal saltimbocca with a nice white wine

What kitchen tool could you NOT live without?

Potato ricer for the perfect light mash

In your restaurant or premises who would be your ideal diner?

 Ideal diner anyone who loves their food.

If you weren't a chef what would you be?

I think it would be a design writer

Where do you go when you want to eat at a restaurant?

I like to dine out but like to try different places all the time, that way you can keep an eye on changing trends

What 5 ingredients would you choose to have on your desert Island?

 PG tip t-bags, milk, rich tea biscuits that`s me happy.
