Charlie trotter the famous american chef who was a big star in the 80s and Auguste Escoffier  the king of chefs

What do you like to cook and why?

Meat but lamb as it very flexiable and brings a very strong flavour

When did you decide to become a chef? 

When i was 15

What do you remember about School dinners?

The custard in the big green jugs

What was your favourite school dinner?

Fish and chips on a friday

What would be your perfect meal?

A salmon mouse with melba toast and crisp green salad,lamb  giggot chops onion rings peas and hand cut chips with a mint and shallot jus ,a trio of desserts to include choclate gateaux.sherry triffle and choclate ice cream in a brandy basket

What kitchen tool could you NOT live without?

A kitchen porter 

In your restaurant or premises who would be your ideal diner?

Anybody who's not on a special diet , a vegan or vegetarian.Someone who eats off the menu and knows about food

If you weren't a chef what would you be?

A lawyer
