Name 2 of your “food heroes” and tell us why they inspire you?

My 2 food heroes are Marco Pierre White because of his great career and just how amazing his food was and still is even to this day and my grandfather. My grandfather wasn't a chef but was an amazing cook and I used to love to watch him cook.

What do you like to cook and why?

I love to cook fish the most I just think  making nice dishes with fresh Scottish fish is the way forward using local ingredients

When did you decide to become a chef?

I decided to become a chef at the young age of 14

What do you remember about School dinners?

I remember that they were not as good as nowadays but there was always a great choice

What was your favourite school dinner?

My favourite meal at school was hot dogs and choc chip cookies

What would be your perfect meal?

My perfect meal would be just nice slow cooked cuts of meat and lovely local seasonal veg

What kitchen tool could you NOT live without?

 I could not live without my thermo mix as it is the perfect blender

In your restaurant or premises who would be your ideal diner?

The ideal diner would just be someone who's open minded and happy to try anything

If you weren't a chef what would you be?

I had always thought of joining the police but my calling to the kitchen was much greater

Where do you go when you want to eat at a restaurant?

I always try to go somewhere new to try new and exciting things

What 5 ingredients would you choose to have on your desert Island?

As I am from Aberdeen i would take flour butter water salt and jam so I could make the good old Aberdeen rowie !
