What do you like to cook and why?

Bread – so simple to do and the chemistry behind it , seeing it prove and develop in flavour from such bland ingredients

When did you decide to become a chef?

I left school at 16 and always had a passion for cooking , and was given a full apprentice with MacDonald hotels

What do you remember about School dinners?

Bland , deepfried food with lumpy custard , healthy eating was never heard of

What was your favourite school dinner?

Baked potato with cheese and coleslaw , it was a safe bet

What would be your perfect meal?

Steak and prawns with garlic butter

What kitchen tool could you NOT live without?

Hand blender

In your restaurant or premises who would be your ideal diner?

Sean connery or billy Connelly  both great Scotsman

If you weren't a chef what would you be?

Something to do with sports

Where do you go when you want to eat at a restaurant?

Somewhere with a good reputation and  has a relaxing atmosphere

What 5 ingredients would you choose to have on your desert Island?

Eggs, flour,salt,rice and chicken
