Name 2 of your “food heroes” and tell us why they inspire you?
Anton mossiman-the first famous chef I was aware off, he had style with his bow ties and his cool accent, his food was always stuff I had never seen and it was decorated in the most elaborate ways!
Raymond blanc- very passionate about food! I Love to watch him on tv he oozzes passion and gets very excited about every item in the recipe, fantastic and self taught! He also loves passing on his knowledge and skills he has gained to others!
What do you like to cook and why?
Soups and sauces- They are either very simple or very complex, and there are so many off them!
When did you decide to become a chef?
When I was 16 - It was the first job I was offered and it turned out to be the first love of my life!
What was your favourite school dinner?
Sausage rolls - the only thing I remember being any good!
What would be your perfect meal?
Something like Lamb Boulanger- scottish lamb is the best and very tasty, the dish is simple and classic, needs very little preperation and I can share it with my wife and family!
What kitchen tool could you NOT live without?
Knives- whats a chef with out knives?
In your restaurant or premises who would be your ideal diner?
Atholl Murray an old friend and colleague from one of the ships I have worked on - he is an avid food lover and is always curious and asking for tips on cooking - he is also very complimentary
If you weren't a chef what would you be?
A handy man/mechanic, I love pottering about fixing stuff when I am not working
Where do you go when you want to eat at a restaurant?
Taste of India in Rosyth, it's very authentic and traditional.and the service is good and very friendly.
What 5 ingredients would you choose to have on your desert Island?
Onions, garlic, chicken, salt & pepper - the basics!
