Chef Eduard hari from the old Albany hotel Glasgow he moved to the inn on the park London said he would contact me when a job came up kept his word I did 2 years there and way he ran the kitchen was inspiring ,
I moved from there to the holiday inn Glasgow were I worked with executive Chef Pierre Giraud who inspired me because of his commitment to passing on his knowledge of the French classics and how to organise the kitchen and get the job done
What do you like to cook and why?
A nice curry homemade Nan, chapatti also pasta dishes
When did you decide to become a chef?
Did it at school home economics enjoyed it and then Straight from school into apprenticeship and haven’t stopped since almost 40 years
What do you remember about School dinners?
Trying to get in first table so if there second helpings you would be first up
What was your favourite school dinner?
Carmel cake and custard
What would be your perfect meal?
Nice Thai meal and the company of old friends

Potato rumbler you don’t miss it until it’s broken
