My Granny, because her personal standard is fantastic yet she doesn’t realise it
Gordon Ramsay, although he can become a monster in the kitchen it all derives from his passion for cooking. I find it interesting that his passion is so intense it creates that person.
What do you like to cook and why?
I like to cook with fresh and simple ingredients creating simple flavour combinations which complement each other, because this makes people smile.
When did you decide to become a chef?
In Primary 4, so when I was about 8 years old.
What do you remember about School dinners?
I rarely went for school dinners but do remember the skin on the custard!
What was your favourite school dinner?
Didn’t have one.
What would be your perfect meal?
Fresh halibut, scallops and a confit of duck eaten at a perfect sunset location:
What kitchen tool could you NOT live without?
My grill fork.
In your restaurant or premises who would be your ideal diner?
Someone who enjoys the finer things in life and happens to have a world class singer in the party who can then serenade the whole restaurant!
If you weren't a chef what would you be?
This was difficult to answer! Perhaps a motivational coach.
Where do you go when you want to eat at a restaurant?
If it’s a special meal then London or Edinburgh.
