HFW is my hero- his farm, cafe, small holding is incredible and his ethos and relationship with food is spot on.


What do you like to cook and why?

Big hearty sharing food, social food!


When did you decide to become a chef?

When I was 15, but I went to uni instead...might make different choices now.


What do you remember about School dinners?

I always brought a packed lunch. But I remember old school dishes like kievs/schnitzel/cottage pie. And there was always a hot pudding like syrup sponge. Everything came with custard that had a skin on it!


What was your favourite school dinner?

Chicken drumsticks, mash and sweet corn


What would be your perfect meal?

Chicken tikka danshak from the valley junction Indian restaurant in Newcastle


What kitchen tool could you NOT live without?

A very good set of knives


In your restaurant or premises who would be your ideal diner?

Alan Shearer!...just kidding.


If you weren't a chef what would you be?

A biology teacher


Where do you go when you want to eat at a restaurant?

I like all foods, but at the moment As I have young kids...a place where the food is great but is also family friendly. The atmosphere that we have tried to achieve at The Pantry.
